This coffee comes from Finca Palmar in Bolivia, where Lupe Alanoca and her husband Marcial share the care and harvest of the Gesha, Java, Catuai, and Pacamara coffee varieties. This Pacamara from Lupe Alanoca is grown using an agroforestry system and has been anaerobically fermented (in the absence of oxygen) with the skin and pulp.
Pacamara is an Arabica variety characterized by its very large bean size. The variety is a hybrid of Pacas and Maragogype; the latter is also known as the “elephant bean” because it is extremely large compared to other Arabica varieties. Pacamara also has a particularly large bean surface area. Pacamara was developed in El Salvador in the 1950s, originally to be more resistant to pests. In Bolivia, this variety is often characterized by a particularly complex, often citrusy acidity paired with plenty of sweetness.
Our Seasonal Roasts will be available for a maximum of 6 weeks and will then be replaced. Since these coffees are special and limited in quantity, however, a Seasonal roast may sometimes sell out earlier.
